Ingredients: Crust: 1 cup flour 1/2 cup butter, softened Filling: 2 eggs 1-1/2 cups brown sugar 3/4 cup coconut 1 cup chopped pecans 2 tbsp flour 1/4 tsp baking powder 1/2 tsp salt 1 tsp vanilla Icing: 2 tbsp butter 1-1/2 cups powdered sugar 3 tbsp orange juice 1 tbsp lemon juice Procedure: Blend crust ingredients until crumbly. Press into 9-inch square pan, bake at 350 for 15 minutes. Beat filling ingredients until well mixed; pour over crust and bake 20 minutes longer; cool. Beat icing ingredients until creamy and spread on top; sprinkle with a few chopped pecans for decoration. Cut into squares. |
